Garlicky Pinto Beans
2 Tbsp. olive oil
6 cloves garlic, sliced
2 (15 oz.) cans pinto beans, rinsed
1/2 tsp. dried oregano
3/4 tsp. kosher salt, to taste
1/2 tsp. black pepper, to taste
4 scallions, thinly sliced
Heat oil in a large skillet over medium heat. Add the garlic and cook, stirring occasionally, until soft, one to two minutes.
Add the beans, oregano, 1/2 cup water, 3/4 teaspoon salt, and 1/2 teaspoon pepper. Simmer, stirring occasionally, until the beans are heated through, about four minutes.
Stir in the scallions and serve.
