Vinaigrette
1/4 c. red wine vinegar

1 tsp. Dijon mustard
1/2 tsp. honey
Kosher salt, to taste
Black pepper, to taste
Salad
8 c. chopped romaine lettuce
1 cucumber, seeded and sliced into half-moons
1/3 c. diced roasted red pepper
1/4 c. sliced banana pepper rings
1/4 c. sliced kalamata olives
1/4 c. fresh mint leaves
Whisk together all ingredients for the vinaigrette.
Combine salad ingredients and toss with vinaigrette.
