Summer Fruit Slaw with Lime Syrup

(serves 12)

For the Lime Syrup

2 Tbsp. minced lime zest
1/4 c. fresh lime juice
1/4 c. sugar
1 Tbsp. white wine vinegar

For the Fruit

2 c. julienned cantaloupe
2 c. julienned honeydew
2 c. julienned jicama
2 c. sliced strawberries
1/4 c. thinly sliced basil

Simmer zest, lime juice, sugar, and vinegar for the syrup in a small saucepan over medium-high heat until sugar dissolves and mixture reduces by half, about 10 minutes.

Place cut cantaloupe and honeydew in a colander to drain excess liquid while syrup reduces. You could also use a salad spinner to remove additional liquid.

Toss together cantaloupe, honeydew, jicama, strawberries, and basil. Drizzle lime syrup over salad; toss before serving.
